Norm’s Diner Arrives in Henderson

A locals’ favorite expands from Spring Valley

Long in the works, the home of the “best Benedicts in town” has expanded from its Spring Valley base and moved into Henderson’s Champion Village Plaza.

Originally launched as Norm’s Egg Cafe by owner and chef Norm Chan, the renamed Norm’s Diner has been a local’s favorite on Durango Drive for its large breakfast, lunch, and dinner menu since 2017.

The new Henderson site at the intersection of the 215 and Gibson Road keeps the breakfast and lunch choices and is currently open from 7 a.m. to 3 p.m. Dinner service will resume once they hire more staff and adjust to the new restaurant. The original diner will keep serving until 9 p.m. from Tuesday to Saturday.

A longtime resident, Chan’s career includes a stint at the former Las Vegas Hilton, highlighted by a memorable interaction with Elvis Presley he cheerfully shares on the back page of the diner’s menu. An “Elvis Chopped Steak” has been created in honor of the occasion.

Joining Gata Thai Cuisine and Bistro Pizza at the retail center, guests can enjoy “freshly made Hollandiase” on a collection of Benedicts, including crab cake, or smoked salmon, plus omelets, scrambles, a fried egg sandwich special, lemon ricotta pancakes, chicken fried steaks, and waffles.

For lunch, the roster grows to sandwiches, soups, salads, burgers and specials including chicken curry, pot roast and a slow cooked beef stew.
