The Most-Anticipated Restaurant and Bar Openings in Las Vegas, Spring 2019 Edition

Spring arrives in Las Vegas with a bevy of new restaurants on the horizon. Water Grill brings its seafood restaurant to Las Vegas, while Smith & Wollensky finally returns to the Sin City dining scene. Lisa Vanderpump of The Real Housewives of Beverly Hills fame opens her cocktail lounge, while a barbershop and cocktail lounge debut at the Cosmopolitan of Las Vegas. The Palms keeps its foot on the gas with two new restaurants, including on from Bobby Flay. And locals’ favorite Dan Krohmer of Other Mama fame has two new restaurants on the way. Here’s a look at some of the biggest restaurants opening this spring in Las Vegas.

Water Grill, the vaunted seafood restaurant out of Los Angeles, takes over the former Spago space at the Forum Shops at Caesars with a menu changing daily. A raw bar and chilled shellfish menu features Pacific and Eastern oysters, as well as clams, scallops, lobster, sea urchin, and crab. The lunch and dinner menus will feature more than a dozen varieties of fish options as well as a whole fish options with different preparation styles.

Grand Canal Shoppes

Nearly two years after closing on the Las Vegas Strip, Smith & Wollensky will open once again, this time in the Grand Canal Shoppes at the Venetian. The chain steakhouse takes over the former Zeffirino Ristorante space at the mall after closing in May 2017. The 14,000-square-foot restaurant seats nearly 400 people, welcoming back old dishes such as a 24-ounce rib-eye steak and a bone-in New York cut, as well as newcomers including an American wagyu beef, a tomahawk steak charred table-side, and rotisserie-roasted chicken, veal, and prime rib.

British TV personality Lisa Vanderpump takes her restaurant background to Las Vegas next year when she opens Vanderpump Cocktail Garden at Caesars Palace. Dubbed a cocktail garden, the new bar follows her Los Angeles restaurants and lounges, Villa Blanca, SUR, Pump, and Tom Tom.

The Barbershop Cuts & Cocktails

Projected Opening: March 15

Clique Hospitality released new details on its new speakeasy cocktail lounge replete with a barbershop going into the former Bond space at the Cosmopolitan of Las Vegas. On the barbershop side of the space, visitors can get a classic cut, beard trim, or straight razor shave, overseen by master barber Jose Sosa and his grooming team. The New York native moved to Las Vegas in 2013 to work as a professional concierge barber, and even styled some of Las Vegas’ most notable icons. By night, the space offers live entertainment and a cocktail program with riffs on vintage favorites.

Iron Chef Bobby Flay plans to open Shark with a menu based on fish dishes. That means sushi and raw bar items, all with a Latin flair. The Palms is calling his menu “reflective of the evolution of Flay’s culinary voice.” Aside from sushi and sashimi, ceviches, and tartares, “bold preparations of fish and seafood” make his menu that takes cues from South American, Mexican, and Mediterranean ingredients.

Greene St. Kitchen

Projected Opening: April 5

An ode to New York City’s Greene Street and the artistic communities in New York’s SoHo neighborhood during the early ’80s comes to the Palms in April. Clique Hospitality’s Lanny Chin will serve as chef du cuisine, serving a modern American menu of shareable plates and over-the-top entrees such as Legs and Eggs with butter-poached king crab legs and Kaluga caviar, Jidori chicken kebobs served with shawarma-spiced tzatziki sauce, and a kale and duck confit salad. A 42-ounce tomahawk rib-eye steak comes with a creamy au poivre and bordelaise sauce.

Le Monja and Hatsumi

Location: Fergusons Motel

Projected Opening: Hatsumi opens in March, while Le Monja opens in late April

Daniel Krohmer of Other Mama fame opens two new restaurants in Fergusons Motel — Le Monja, a Mexican restaurant with a fish market feel, and Hatsumi, a Japanese robata-style restaurant, by the beginning of the year. Le Monja relies more on coastal seafood with low prices, with fewer burritos and tacos and more ceviches. Hatsumi features a Japanese charcoal-burning grill with sashimi and a late-night tasting menu. Bobby Silva takes over as chef de cuisine at Hatsumi, while Noel Flores leads the kitchen at La Monja.
