Explicitly inspired by Eggslut at the Cosmopolitan of Las Vegas and the Tao Group’s Egghead in New York, a new Las Vegas restaurant promises to bring a collection of creative sandwiches to the southwest.
Egg Sammie, previously Egg Sammy, is moving into a corner space a few steps from the entrance to the Sprouts Farmers Market, located at the intersection of Warm Springs Road and Rainbow Boulevard.
Recently filing paperwork to begin construction, the 2,000-square-foot project joins Rubio’s Coastal Grill and a Wendy’s at the still-developing retail center.
Yet to be confirmed, a very early menu includes the “Classic Sammie,” made with egg, smoked bacon, American cheese, and chipotle ketchup, a steak and potatoes version with “shaved Tri-Tip steak,” huevos rancheros, and the “Day After Thanksgiving Sammie” prepared with “soft scrambled eggs, turkey sausage, cranberry jam, hash brown, sausage gravy, and American cheese.”
Also on the potential roster, “homemade biscuits, served with honey butter” and the “Dippy,” a “coddled egg in a jar with potato gratin, bacon bits, chives, and cracked sea salt.”
An estimated opening date, or future operating hours have not been announced.
