Serving “100% vegan food” on Henderson's Stephanie Street since 2017, VeggiEAT Xpress has debuted a new brick-and-mortar expansion 18 miles to the west at The Mall at Grand Canyon retail center.
Originally launched inside the eastside’s 99 Ranch Market grocery store on Maryland Parkway, VeggiEAT shuttered that small walk-up outpost earlier this year.
The new home continues the Asian-fusion menu found in Henderson, a merging of popular Vietnamese- and Chinese-inspired dishes with a plant-based twist.
Located between Fuddruckers and Mad Hatter Cupcakes, the counter service restaurant sits close to the corner of Flamingo Road and Grand Canyon Drive.
On the large menu, vegan chicken nuggets and spring roll appetizers, vegan fish, tofu, or grilled mushroom sandwiches, entrees of “General Tsao Cauliflower” and “sweet and sour vegan shrimp,” plus stir-fry noodles, fried rice, noodle soups and a collection of sushi rolls.
