Still officially promised to be “coming soon” to the Grand Canal Shoppes, a team member has shared the first rendering of the elaborate Xiang Hot Pot interior design.
Created in Flushing, Queens, in 2003 and recently expanded to Brooklyn, the Las Vegas expansion, still hidden behind construction plywood, sits a few steps from Once, SushiSamba, and future arrival, Trustworthy Brewing Co.
David Zhao, a managing partner in Chubby Cattle and the Las Vegas outpost of Meet Fresh, has posted an early rendering of the restaurant he dubs “The X Pot,” hinting a pricey, ornate interior design is on its way to the Palazzo.

Hiring since last fall, but yet to commit to a firm debut date, the Xiang concept includes live entertainment and an uncompromising Sichuan-inspired menu it boasts will satisfy “the most adventurous diners.”
The huge, shareable servings of the namesake soup are the main menu attractions, featuring familiar ingredients, or self-described “fun” extras of “Xiang Hotpot Signature Fish Head, our Crisp Triratna, Ox Tripe/Bone Marrow, and Wild Bamboo Fungus.”
