Breakfast and lunch just got a little healthier with some help from Canyon Ranch Spa Club. The massive spa at the Venetian now has Truth & Tonic, serving healthy fare.
The restaurant takes its cues from apothecaries of yore, with a food and drink menu that emphasizes the healing benefits of ingredients and prescribed culinary “cures.”
Executive chef Pete Ghione created a menu of nutrient-dense superfoods and adaptogens (roots and herbs known for their healing effects on the adrenal system). Every dish on the menu features calorie counts, as well as whether it is gluten-free or vegan.
The menu features roasted cauliflower with a house-made Caesar and topped with a chimichurri shrimp skewer; Maine lobster club sandwiches with slices of heirloom tomato and crisp bacon; grilled aubergine with marinated eggplant; roasted portobello mushrooms; whole grain banana and avocado pancakes; a chicken avocado wrap; and a sesame tofu spinach salad.
Cocktails (yes, cocktails) feature pressed juices and herbs, along with organic, biodynamic, and natural spirits, wines, and beers. Coffee comes from Caffe Umbria of Seattle.
