Light, airy, and fast-casual. The new Valencian Gold brings paella in a different format to Las Vegas when it opens on Friday. The restaurant in the Southwest from chefs Paras Shah and Jeffrey Weiss takes the celebrated Spanish dish and gives diners the option of building their own bowl of the rice dish.
Dubbed “Paella for the People,” Valencia Gold’s approach lets customers start by picking their paella base, then a protein, dips, and a dozen toppings and sauces. Tapas and Spanish desserts round out the menu. Valencian Gold offers gluten-, dairy-, soy-, and nut-free options on its menu as well as vegan and vegetarian options.
The restaurant features pops of orange paired with natural woods and a living greens wall make up the space. Two murals add some color to the space that offers floor-to-ceiling windows and clear chairs at the gray tables.
