Las Vegas and the Strip land a new brewery serving barbecue fare with the opening of Trustworthy Brewing Co. & BBQ. The restaurant and brewery at the Grand Canal Shoppes focuses on small-batch beers, all brewed on site.
Lloyd Bansil, formerly at Momofuku, came on board as the chef, creating a menu of smoked meats and barbecue dishes such as St. Louis-style pork ribs with maple and mustard; a grass-fed, hand-rubbed beef brisket; the Trustworthy burger with grass-fed beef, Tillamook cheddar cheese, lettuce, tomato, and red onion served on a brioche bun; beef ribs with Trustworthy’s garlic and herb rub; and a 16-ounce thick cut hickory-smoked prime rib with parmesan garlic mashed potatoes, Brussels sprouts, and au jus.
Diners can order the Pitmaster’s Feast with three smokehouse meats served with a choice of three sides, cornbread, and house pickles, all served family-style. Deviled eggs, ketchup-seasoned fried pork rinds, pulled pork nachos, brisket burrito, watermelon salad, and four different kinds of mac and cheese with rotelle pasta, cheddar, and Gruyere make the menu.
Head brewer Matt Crewe handles both the new Las Vegas location as well as the original from MCC Hospitality in Burbank, Calif. Customers can request private brewery tours as well. Certified cicerone Robert Parekh, formerly of TAP at MGM Grand and The Pub at the Monte Carlo, serves as general manager.
