Valencian Gold from chefs Paras Shah and Jeffrey Weiss opens on Friday, July 12, and now the chefs have also shared the first look at their build-your-own paella bowl menus headed to the southwest.

Dubbing their restaaurant a Chipotle-style spin on Spanish fast-casual dining, Valencian Gold will take over the shuttered 1,858 square-foot Kulinarya Express Filipino Kitchen at the Southwest Marketplace, close to the intersection of Rainbow Boulevard and Windmill Lane.

Currently hiring for its “VG Paella Posse,” future diners will first choose a base for their individual paella dish, including options of seafood, chicken, vegetables, and rice, or a bed of greens.

Then follows proteins of grilled lamb, steak, shrimp, or vegan herb-bean salad, followed by dips of “creamy roasted eggplant,” vegan tahini, and “charred broccoli.”

Side dishes include croquetas, gazpacho and “jamón y queso,” and for dessert, customers can order flan, saffron rice pudding, or a “Spanish snickerdoodle.”

Announced opening hours will be 11 a.m. to 10 p.m. daily and from noon to 7 p.m. on Sundays.
