Michelin-Starred Pastry Chef Launches Southwest Cafe

Owner and two-star Michelin pastry chef Michael Gillet is expanding beyond his consulting and custom event work and opening a boutique, European-inspired cafe in the southwest.

Moving into the Rainbow Sunset Pavilion Center, just north of the 215 on the west side of Rainbow Boulevard and across the parking lot from Bonchon Chicken, Mg Patisserie & Cafe will continue its wholesale business, but also offer more selections for guests who walk in through the front door.

Currently scheduled to be open Monday to Saturday from 8 a.m. to 6 p.m., the cafe is announcing it will soon begin pouring coffee alongside its cravable breakfast pastries.

A previous executive pastry chef at the Red Rock Resort, the former Sugar Factory American Brasserie, and four resorts within Caesars’ Strip portfolio, Gillet vows to feature “state-of-the-art pastries and baked goods made from quality and organic ingredients whenever possible.”

Customers can expect different selections each time they visit, but recent creations include “lemon Meyer tart with vanilla bean from Madagascar and a candied pink grapefruit,” crème brûlée served in a pull tab lid container, bread pudding with mascarpone cream, cupcakes, bonbons, vanilla cream puffs and the ganache-filled, “Bubbly Brownie Bear.”
