A tribute to sweet and savory Belgium casual dining is headed to the southwest and Utah-based Bruges Waffles & Frites is getting closer to serving up “Waffle Monsters,” a “Machine Gun Sandwich,” and European fries with dipping sauces.
Renaming itself Bruges Belgian Bistro for its first out-of-state franchise, the 903-square-foot space is being quickly transformed at 5660 Hualapai Way, a short distance from Russell Road and on the opposite side of the building from the under construction Rivas Mexican Grill, also promised to be “coming soon.”

With the name change, diners can expect dishes imported from across the brand's three locations, expanding beyond its Belgian frites and Liège waffle origins.
Available on the Provo, Utah, menu, Belgian hot dogs, Flemish stews, a croque monsieur, plus the “Machine Gun Sandwich” created with a baguette “stuffed with 2 Morgan Valley merguez (our secret recipe) lamb sausages, andalouse dipping sauce, and frites.”
An exact opening date, or future operating hours have yet to be announced.
