Publicly announcing they hope to debut before the end of the month, Utah-based Bruges Waffles & Frites will soon be the southwest’s first home for Belgium-inspired cones of fries and sweet, or salty, waffle creations.
Moving into 5660 Hualapai Way, at the intersection with Russell Road, the 903-square-foot counter-service restaurant will sit next to the upcoming Baya Bar and the under construction Rivas Mexican Grill, also promised to be “coming soon.”
Preparing to begin testing service on Aug. 24, the interior space has added a large mural in an appropriate European bandes dessinées, comic book-style.
Bruges started as a vending cart by Brugge, Belgium-born Pierre Vandamme in 2004 and expanded to three Utah locations. In Las Vegas the final menu has yet to be announced, but is expected to include the Machine Gun sandwich created with a baguette and two lamb sausages, and the Waffle Monster prepared with chicken tenders, a sweet caramelized waffle, whipped cream, and a strawberry for the beak.
