New Food Truck Rolls Mexican-Fusion Fare to the Streets of Las Vegas

El Queso Guero comes from a veteran of The Great Food Truck Race

A new food truck brings Mexican fusion food to the streets of Las Vegas. El Queso Guero from Eddie Tallman serves a roster of tacos with careen aside, 12-hour smoked pork, and chicken tinga. Burritos stuffed with those same proteins and quesadillas join gringo nachos made with tater tots, chips and salsa, and rice and beans made with smoked black beans.

Tallman is no stranger to the food truck scene. He operated Sin City wings, Sin City Pizza, Ben’s BBQ, and Slidin Thru, all through Culinary Logic LLC.

He also worked as the food truck coordinator for the Food Network’s Great Food Truck Race for the past seven seasons. “I would train all the contestants on how to operate the truck (driving, gas, propane, clean, fill fresh water, start, and operate equipment). I would also have to handle the health inspections and commissaries (place to park and clean the truck) for each city we visited,” he says.

The job had him traveling to each city along the East Coast, from Myrtle Beach to the Florida Keys, northeast Vermont to Rhode Island, and in the south from New Orleans to Savannah, Georgia, along with California, Las Vegas, and Arizona.

Tallman plans to park El Queso Guero on the UNLV campus on the first and last Friday of the month. Future plans include private and corporate events, along with events at the Las Vegas Motor Speedway.
