A classic Italian restaurant returns to Red Rock Resort. Terra Rossa makes a comeback at the Summerlin resort with a roster of family-style menu options and classic staples for dinner.
Executive chef Dan Rossi, who previously worked at Scarpetta and Rose.Rabbit.Lie at the Cosmopolitan of Las Vegas and Eiffel Tower Restaurant at Paris Las Vegas, takes over the kitchen, bringing a Josper oven and grill for charcoal-based cooking dishes such as a striploin with lemon and herbs, bistecca alla Fiorentina with rosemary and garlic; chicken paillard with blistered tomatoes, herbs, and lemon; and swordfish with a white wine butter sauce and lemon.
New dishes include sausage and peppers and cacio e pepe, as well as veal Parmesan served family style, pastas, and pizzas baked in a wood-fired oven.
The restaurant takes over the former Masso Osteria space from chef Scott Conant that closed at the end of May.
Terra Rossa originally opened with the resort in 2006, closing in 2014 to eventually make way for Salute Trattoria Italiana. Terra Rossa’s sibling restaurant Terra Verde at Green Valley Ranch also disappeared the same year to become Bottiglia.
Tuscany-inspired and featuring a large open kitchen, the restaurant achieved a moment of national fame when Heather West, winner of Hell’s Kitchen’s second TV season, earned the position of senior chef as her competition prize.
