Spring Valley’s under-construction Rainbow Commons retail center in Spring Valley will be home to two Southern California imports when it opens at the intersection of Rainbow Boulevard and Sunset Road by late fall this year.
San Diego’s Greek Chicken, with the self-proclaimed motto, “If you’ve had better chicken you must be a rooster,” is confirming its counter-service restaurant will move into the large central building.
The family-owned Greek Chicken launched three popular locations since 1987, built around a menu featuring lemon-seasoned chicken, gyros, and chicken pitas, Greek salads, plus kabob or gyros plates.
In the building next door, the California Fish Grill casual kitchen will be the first out-of-state expansion for the ambitious brand, growing to more than two dozen restaurants since 1998.
On the self-described “responsibly delicious” menu, ahi tuna, Atlantic salmon, and rainbow trout cooked on a flame grill, bowls served over quinoa, brown rice, or kale, and battered fish and chips, breaded shrimp, scallops, or calamari, and fried catfish.
Also on the way, a 3,980-square-foot In-N-Out Burger with a drive-thru, close to a new gas station and a 7-Eleven.
