Theo Schoenegger returns to Sinatra at Encore Las Vegas as the executive chef of Sinatra, the ode to the singer that serves classic Italian dishes. Schoenegger left the restaurant in 2017 to become the executive chef of Maria & Enzo’s Ristorante and Enzo’s Hideaway Tunnel Bar at Disney Springs in Orlando, Florida. He opened Sinatra in 2008, and previously worked as the executive chef of Patina at Walt Disney Center in Los Angeles for five years. Some of Sinatra’s favorite dishes, including spaghetti and clams and osso buco, make the menu, while the restaurant pays homage to the singer and actor with some of his mementos and music.
Ivo Angelov, the long-time general manager at Le Cirque at the Bellagio, is now the general manager of Costa di Mare, the Italian restaurant featuring Mediterranean coastal cuisine at Wynn Las Vegas. Executive chef Mark LoRusso and Angelov originally worked together at Michael Mina’s Aqua at the Bellagio. He spent 11 years at Le Cirque, and previously worked as the assistant general manager of Michael Mina, where he began his career with the restaurant as a sommelier. Angelov assumes the role previously held by Elion Prodani, who now works as the general manager of SW Steakhouse.
Lanny Chin takes over the kitchen at The Slanted Door, the Vietnamese restaurant with San Francisco roots that’s opening at the front of the Forum Shops at Caesars. The former Greene St. Kitchen chef de cuisine at the Palms previously worked as the executive chef of all three PKWY Tavern locations in Nevada. In 2017 he joined Andy Masi’s Clique Hospitality as the executive chef at Apex Social Club and Camden Cocktail Lounge.
