Brian Lhee takes over the kitchen at David Chang’s new restaurant, Majordōmo Meat & Fish, opening at the Palazzo in November. Lhee formerly worked as the executive chef at Tao Asian Bistro at the Venetian and Yusho Japanese Grill & Noodle House, the Japanese-inspired street food restaurant from Chicago chef Matthias Merges at Monte Carlo. Merges brought Lhee, who previously served as chef de cuisine at Yusho in Chicago, to oversee the culinary team and influence the menu with his take on Asian cuisine techniques and eclectic flavor combinations. Lhee was Eater Vegas’ Chef of the Year in 2014. [LVRJ]
Sammy DeMarco, who had First Food & Bar at the Palazzo and Rattlecan at the Venetian, plans to continue working as a consulting chef at 7th & Carson, where he held a popup brunch on Sept. 15. Some of the dishes he served will be incorporated on the menu while the Review-Journal reports that the Fremont East restaurant plans to revamp its cocktails, wine list, menu, and hours by the middle of October. Shawn Hamada takes over Gordon Ramsay Hell’s Kitchen at Caesars Palace as the executive chef, replacing the departing Jennifer Murphy. Hamada was the chef de cuisine there since April 2018, and previously worked at the former Fiamma Trattoria and Nobhill Tavern at the MGM Grand. [EaterWire]
