Wynn Las Vegas closed its pan-Asian restaurant Andrea’s on the Encore side of the resort in anticipation of a remodel to open a contemporary Mexican restaurant in early 2020.
Andrea’s opened in late 2013, named for former Wynn CEO Steve Wynn’s British wife Andrea Hissom Wynn with “vibe dining” and a futuristic sleek interior complete with a photo of Hissom Wynn’s eyeball behind the bar.
The unnamed Mexican restaurant brings Enrique Olvera, Daniela Soto-Innes, and Santiago Perez, the team behind acclaimed restaurant Cosme and the more casual Atla in New York City, and Damian and Ditroit, which will both debut later this year in Los Angeles.
Olvera also owns the fine dining restaurant Pujol in Mexico City and wrote cookbooks including the best-selling Tu Casa Mi Casa. He teams up with Soto-Innes, who staged in the kitchen of Pujol, opened Cosme in New York City as chef de cuisine, and was named the James Beard Rising Star Chef of the Year in 2016. Perez, an investment banker turned restaurateur, rounds out the trio.
So far, Wynn only teased “Mexican flavors, exceptional service, and a high-energy social atmosphere.”
