First, Eric Persson revealed plans to bring as many as 10 Potbelly Sandwich Shops to Las Vegas and now his own creation is planning to debut two Las Vegas restaurants with a locally well-known chef as its figurehead.
Jet Tila will soon be unveiled as the face of Dragon Tiger Noodle Co., a fast-casual restaurant described as a “high volume, fast-paced restaurant serving noodle and rice bowls,” plus tonkotsu ramen, Thai and Chinese soups, pho, and Thai dishes.
The former executive chef of Wazuzu at Encore Las Vegas was last seen in Las Vegas at his Kuma Snow Cream shaved ice dessert spot that shuttered in Chinatown in 2016.
Dragon Tiger will serve a customizable collection of the chef's pan-Asian noodle dishes, with both locations built in conjunction with a Tropical Smoothie Cafe as its next door neighbor.
Moving into the Southern Highlands Marketplace at the intersection with Somerset Hills Avenue, the noodle outpost will also join Mint Locker, Baskin Robbins, and Verizon in a purpose-built structure.
Five miles to the east, the Henderson store will move into the intersection of St. Rose Parkway and Amigo Street, accompanied by a Domino’s and one of Persson’s Potbelly stores.
An estimated opening date for either of the sites has yet to be announced, but are promised to be “coming soon.”
