Potbelly Joins Jet Tila, Greek Chicken, and California Fish Grill in Spring Valley

An under-construction Spring Valley retail center is preparing to host four new-to-Las Vegas, casual-dining options, creating a real estate template for future mixed-use projects around the region.

Anchored by a future 3,800-square-foot In-N-Out Burger with a drive-thru, the 46,500-square-foot Rainbow Commons Shopping Center at the intersection of Rainbow Boulevard and the 215 is close to completing its three empty shell buildings.

The first out-of-state expansion for the California Fish Grill is currently promising to be “coming soon,” offering patio seating and a “responsibly delicious” menu including grilled ahi tuna, Atlantic salmon, and rainbow trout, bowls served over quinoa, brown rice, or kale, and battered fish and chips.

A larger, 9,755-square-foot central building is now confirmed to be the future home of five tenants, with San Diego’s Greek Chicken moving into the western corner, importing lemon-seasoned chicken, gyros and chicken pitas next door to the Floyd’s 99 Barbershop.

Potbelly Sandwich Shop will launch one of its 10 projected Las Vegas outposts in the middle space, serving chicken pot pie, soups, chili, and salads alongside its wildly popular sandwich creations found at more thann 450 nationwide stores.

Menchie’s Frozen Yogurt will sit between Potbelly and the highly anticipated Dragon Tiger Noodle Co. from chef Jet Tila. Also moving to Henderson and the Southern Highlands Marketplace, Tila has developed a build-your-own pan-Asian noodle and rice bowl menu.

Estimated opening dates for all six ventures have not been released.
