The Tasty, his ode to the White Manna, the slider burger institution in New Jersey, features a griddled patty with American cheese and griddled onions, served across two King’s Hawaiian rolls. The beef version uses natural brisket and short rib in the mix, while a Not Beef version uses Impossible meat.
Hot Chips feature fried potato chips that Chang perfected for a mix of crunchy and chewy textures. They come seasoned with salt or honey butter, served with a side of Luna Sauce.
Finally, the Half Dip features two pancakes filled with marshmallow fluff and partially dipped in chocolate.
Moon Palace also serves sodas, iced tea, and some beers.
The space features 20 stools at a countertop that look into the open kitchen.
Moon Palace plans to add to its menu as well.
Chang also plans to open a third restaurant at the Palazzo, dubbed Siberia, an all-you-can-eat restaurant that combines Brazilian grilling techniques and Korean marinades inside Majordomo.
Moon Palace, Palazzo, 3325 Las Vegas Boulevard S., 702-414-0011. Open daily from 11 a.m. to 4 p.m.
