MB Steak, the former steakhouse at the Hard Rock Hotel, isn’t just going through a remodel as the resort renovates to become Virgin Hotels in early 2021, but now brothers and co-owners David and Michael Morton say the restaurant changes names to reflect the revamp.
When Virgin Hotels opens on January 15, MB Steak converts into One Steakhouse, a name that reflects the three generations, two brothers, one steakhouse idea behind the restaurant.
“Our father was the founder of Morton’s Steakhouse, which was our training grounds and we’ve been around the steak business for a long time,” Michael Morton says. “Steak is simply the one thing we do best.”
Michael Morton says that MB Steak was really built as its own entity when it opened at the Hard Rock Hotel in 2017. “We really blocked everything off from MB Steak to the casino. We not only had a wall , but we have a tunnel to go through to really bring you into our own world,” he says.
With the renovations, the bar area at the front opens up onto the casino floor.
“It’s really a total 180, having a completely new brand, new hotel, an incredible design, completely different layout. We thought it was completely warranted for us to do the same,” Michael says. “We’re not just changing the name.”
Upstairs, the 50-person lounge now has a giant 12-foot by 8-foot LED screen that can show one game or many while customers order a bottle of wine at high-top tables. “It’s a little bit more fun and certainly an important emphasis is on sports,” Michael says.
Back in April, the steakhouse allocated an estimated $1.5 million in construction costs alone to increase the size of its bar and main dining room.
Executive chef Patrick Munster returns as well with a new menu, including table-side presentations.
The Morton brothers note that now they partnered with the hotel and Richard “Boz” Bosworth, president and CEO of JC Hospitality LLC, which owns Virgin Hotels Las Vegas. “To have them remain with us on this project and invest in changes to the venue to reflect the evolution to Virgin Hotels Las Vegas — shows their commitment to the brand and our guests,” Bosworth says in a press statement.
