One of Las Vegas’ most popular home-born breakfast and lunch restaurants is preparing for a new expansion and has already plotted a tentative timetable for a debut in Spring Valley next year.
Griddlecakes will launch its fourth local outpost at the Times Square Shopping Center next spring, moving into an easy-to-spot building at the intersection of Rainbow Boulevard and Flamingo Road, and sharing the 3,750-square-foot space with a soon-to-debut Dairy Queen.
Previously occupied by an Einstein Bros. Bagels coffee shop, the stand-alone structure does allow the possibility of adding a small outdoor patio.
Launched in 1991 and serving generous plates of breakfast and brunch favorites, Griddlecakes also earned a loyal following for its photogenic, decadent, cream-topped pancake creations.
Currently offering curbside and delivery options via Postmates and GrubHub, the restaurant remains open daily from 7 a.m. to 3 p.m. at its Eastern Avenue location in the southeast and on Decatur Avenue in North Las Vegas. Griddlecakes’ two-year old original Spring Valley site on Fort Apache Road continues to serve until 2 p.m. during the week and closes at 3 p.m. on Saturday and Sunday.
