Joining a growing local trend and boosted by the debut of Chikyu Vegan Sushi Bar & Izakaya over the summer, Colorado chef Mindy Lim has already created a pre-debut buzz for her first 100 percent vegan restaurant, now officially launching early next month.
Daikon Vegan Sushi & More expects to open on Friday, December 4, inside the former, 1,190-square-foot Poke Addiction space at the westside’s Whole Foods Marketplace, serving chef Lim’s spin on a plant-based Asian fusion fast-food menu.
Planned to be open daily from 11 a.m. to 9 p.m., close to the intersection of Lake Mead Boulevard and Tenaya Way, the diverse selections will include fresh squeezed juices, smoothies, and teas.
A co-owner of Boulder, Colorado’s My Ramen & Izakaya, Lim’s dishes will also be available for takeout or delivery, featuring made-to-order sushi rolls, nigiri pieces, tempura fried king oyster mushrooms, roe “pockets” prepared with carrot juice and algae, and a tonkatsu plate created with panko-fried tofu skin.
