A strip of previously vacant land between Decatur Boulevard and Edmund Street is transforming into a quick and casual dining hub on Blue Diamond Road, with newcomer Gabi’s Gorditas promising to debut a healthy spin on comfort food early next year.
Originally hoping for a January launch and currently posting images of equipment ready to create handmade tortillas, remodeling has begun inside its unoccupied footprint.
Among Gabi’s operators, Alfredo Delatorre, whose resume includes managerial stints at the Blind Pig, Public House at the Palazzo, and Chin Chin at New York-New York.
Overseen by a handful of landlords, the stretch of new and under construction Blue Diamond tenants includes a recently opened Wingstop, an EOS Fitness center, a future Denny’s restaurant, and a second Las Vegas outpost for the health-conscious ProteinHouse, plus a proposed four-story, limited-service hotel.
At the Jansen Plaza retail pad, Bella Vita is already confirmed to be expanding its “obsessive Italian cuisine” from Henderson, located a short distance from Piezza, a “do it yourself” pizza restaurant.
A sequel to its District at Green Valley Ranch destination, Bella Vista’s early plans included an airy, open main dining room and an outdoor patio large enough for 40 diners.
Piezza customers will have the option of choosing all the toppings, type of crust, and specialty dough to create each pie, placing orders inside the counter-service space or via a drive-thru window.
Both new ventures have yet to update a potential 2021 opening date.
