La Strega, the Eater 38 Italian restaurant that was Eater Vegas’ Restaurant of the Year in 2019 from chef Gina Marinelli, now has a menu of piadana, Roman flatbread sandwiches, just for takeout and curbside pickup made only for lunch.
“The idea behind this was to create a brand within a brand,” Marinelli says. “I wanted to create a secret sandwich shop featuring piadina.”
Marinelli, who calls the secret sandwich shop a direct response to new COVID-19 restrictions in the state, uses her dough baked in the restaurant’s pizza oven, and then throws the flatbreads on the grill so that they hold and travel well.
Diners can order piadine in smoked salmon with caper crema, marinated cucumbers, and pickled shallots; salami with salsa verde, burrata, and basil; mortadella with fennel seed aioli and fontina cheese; prosciutto cotta with aged provolone, black olives, and pepperoncini; or eggplant with baba ganoush, bufala, roasted peppers, and mint, all for $11 to $12 each. La Strega also has a tri-color sciaini salad for $12 made with salami, mozzarella, and a pesto vinaigrette; $3 house-made Parmesan chips; rosemary olives for $4; Strega pickles for $2; and a Piccola Aperol Spritz made with blood orange Pellegrino that is canned in house for $10.
