Despite confident announcements, chef Jill Martinez-Montinola’s new seafood restaurant has missed a series of announced opening dates at Tivoli Village and is now looking to spring for its long-awaited launch.
Recently hiring ahead of a previously promised February debut, SeaBream is projecting an April debut inside the long-vacant home of Japanese restaurant Kabuki on the western side of the upscale retail center.
Building its Las Vegas menu around “different Asian-inspired umami flavors to elevate the dishes.” Chef Montinola previously worked as the executive pastry chef at Seaspice Brasserie & Lounge in Miami.
Late last year, paperwork revealed the 5,784-square-foot space would be remodeled with a 16-seat lounge, 11-seat sushi bar, rectangular main dining room, plus an indoor/outdoor patio with room for 40 diners, including a section for people watchers right by Tivoli’s pedestrian walkway.
Among the future dishes under consideration, roasted bone marrow, grilled oysters upgraded with soy calamansi and cilantro butter, Thai-style crispy steel trout, and sesame garlic soba noodles paired with sweet miso prawns.
