Still to be announced by the mall, or the Texas-born concept, Galpao Gaucho Brazilian Steakhouse’s imposing plywood confirms it is coming soon to a prime Strip location, boldly competing with a Benihana: Sushi & Japanese Steakhouse, right next door.
Replacing the shuttered, 8,787-square-foot former home of Kona Grill at the Fashion Show mall, Galpão Gaucho launched in 2014 and now operates a portfolio of five restaurants in California; Charleston, South Carolina; and San Antonio.
Early permits allocated an estimated constitution budget of $600,000 to rebuild the roomy interior, designed for bandana-wearing servers slicing 17 different cuts of meats at each table, and guiding diners to the 40-item, oversized salad bar.
Previous locations offer all-you-can-eat options for lunch and daily dinner service, including cuts of top sirloin, filet mignon, picanha, and grilled salmon, plus garlic mashed potatoes, caramelized bananas, rice and black beans side dishes, and among the desserts, crème brûlée, Brazilian flan, and molten chocolate cake.
Impossible to miss at the Fashion Show’s northern entrance, facing Wynn and Encore resorts, a projected opening date has not been revealed.
