Frozen yogurt franchise Pinkberry’s final Las Vegas location shuttered more than a year ago and new filings unveil the very early word on a fast-casual restaurant ready to take its place on the Strip.
Overseen by Haim Gabay, the local entrepreneur and manager of Fremont Street’s Crazy Ely Western Village souvenir store and the famed Bonanza Gift Shop tourist destination, I Heart Daiquiri & Pizza will move into the vacant 2,190-square-foot space, next door to the six-year-old Bobby’s Burger Palace from celebrity chef Bobby Flay.
Ready to begin the Clark County approval process, early plans indicate the front of the restaurant will be open to the sidewalk, with room for customers to sit at the prominent daiquiri bar.
Inside, the food bar will offer pizza, plus indoor seating. Details of a full menu, opening hours, or a possible debut date have yet to be revealed. Pinkberry was open until 1 a.m. daily and until 2 a.m. on the weekend, taking advantage of the busy foot traffic outside its door and the very popular CVS store to the south.
