THE STRIP — Two chefs speak out about what their restaurants will do when Nevada is given the green light to reopen casinos. Akira Back, who has Yellowtail at the Bellagio and Kumi at Mandalay Bay, and Hubert Keller with Burger Bar at Mandalay Place and Fleur by Hubert Keller at Mandalay Bay expect strict social distancing requirements with tables spaced six feet apart, servers wearing masks and gloves, and disposable menus with fewer options. “Other businesses have a big margin of profit. The restaurant is pretty much monthly. Day by day operation. We don’t have a lot of cash in the restaurant business,” Back tells Fox 5. The Southern Nevada Health District is drafting guidelines for restaurants to reopen. [Fox 5]
