The Modern Vegan is back in action on Naples Dive from married restaurateurs Gia and Todd Schultz and the duo have already kick started plans for a new, second restaurant importing downtown style to the eastside.
Moving into the 2,400-square-foot former home of the Motor City Cafe bar at the Rodeo Paradise retail center, Taco Dive Bar is currently undergoing a floor-to-ceiling makeover by a team of street artists affiliated with local mural experts, The ISI Group.
The Detroit-inspired dive bar at the corner of Paradise and Flamingo Roads sits across the parking lot from Morton’s The Steakhouse, in the same, long retail strip as the Las Vegas Donut House and Gandhi India’s Cuisine.
Motor City Cafe featured a small, elevated stage for live concerts, a license to operate video gaming on the bar top and a late-night, 4 p.m. to 4 a.m. schedule, but it is unknown if the Taco Dive Bar intends to continue those traditions.
The restaurant plans to open by the end of the summer and hopes for an August debut with tequila and a vegan menu. Two years ago, Bar Boulevard, the first all vegan craft cocktail and restaurant in Las Vegas shuttered in Las Vegas after less than a month in business.
The Modern Vegan, located a mile from this new venture at the intersection of Naples and University Center Drive, is back open daily for dine-in, curbside pickup, and carryout from 11 a.m. to 7 p.m.
