The latest restaurant from John Kunkel and 50 Eggs Hospitality Group is ready to launch on the Venetian's pool deck June 4 when the resort reopens.
Spritz Restaurant & Bar will join Wolfgang Puck’s seasonal restaurant Solaro and introduces a Malibu, California-themed style to the Mediterranean-influenced pool scene.
Scheduled to be open daily from 8 a.m to 6 p.m, the sophisticated setting was designed by locals Novus Architecture, creating a potential for 88 seats under a shaded canopy chilled by ceiling fans and 15 seats at the standalone bar. Customers can opt for table seating or on raised daybeds with views of the pool.
Inspired by its own name, the drinks menu features three, $18, spritz Champagne cocktails, the sherry and green tea Sencha #2, cynar and passionfruit flavored Como Spriz, and the Wimbledon, prepared with Pimm’s, citrus, cucumber, strawberries, and mint.
Serving breakfast from 8 to 11 a.m, and lunch until closing at 6 p.m, diners can order a fresh spin on morning classics, including pancakes, bacon and eggs, coconut, or acai bowls, avocado toast and sides of pastries, juices, and flatbreads.
The lunch choices include snacks of chicken wings, edamame hummus, crispy shrimp, and a turmeric tonic among the juices.
Salads and flatbreads join entrees of a Skuna Bay salmon poke bowl, a truffle burger with Parmesan fries, a grilled beef tenderloin and ciabatta sandwich, plus a Nashville hot chicken sandwich with spicy slaw. For dessert, customers can chill down with fruit pops, a brandy-yogurt semifreddo and a churro sundae, topped with strawberries.
The menu also offers a separate collection for kids, serving flapjacks, cereal, or cheesy scrambled eggs for breakfast, plus lunch meals of burgers, buttered pasta, pizza, and grilled cheese sandwiches.
