A sophisticated approach to the Mexican brunch debuts this weekend at Elio, the newest restaurant at Encore Las Vegas. Restaurateurs Enrique Olvera and Daniela Soto-Innes will now offer brunch every Saturday and Sunday from 10:30 a.m. to 2:30 p.m. starting on Saturday, July 4. Elio opened June 18 at the resort after delaying its original March debut after Gov. Steve Sisolak ordered nonessential businesses including casinos and restaurants to close to prevent the spread of COVID-19.
Executive chef Sarah Thompson created the summer brunch menu, available in the bar and lounge area. Dishes include sweet potato flauta with salsa cruda to the corn omelet with Oaxaca cheese and classic chilaquiles served with the choice of a fried egg or chicken. The brunch even features dessert options such as sorbet made in house, churros, pan dulce, and golden husk meringue.
No brunch is complete without cocktails, and Elio delivers carajillo with Licor 43 and cold brew as well as the bloody May offered with the choice of tequila, mezcal, vodka, or gin as the base liquor. Agua frescas made in-house come in combinations such as avocado and lemon or jasmine, cucumber, and lime.
Elio is open for brunch Saturday and Sunday from 10:30 a.m. to 2:30 p.m. and for dinner Thursday and Sunday from 5:30 to 10 p.m. in the dining room and 5:30 to 11 p.m. in lounge and Friday and Saturday from 5:30 to 11 p.m. in the dining room and 5:30 p.m. to 1 a.m. in the lounge.
