Almost a year since it was first announced, Henderson’s Biscuits & Bourbon is officially “nearly complete” and close to launching a highly anticipated breakfast, lunch, and dinner destination inside a former Bank of America complex on Water Street.
Well advanced in its interior construction, Biscuits & Bourbon is currently hiring at 109 S. Water Street, located at the intersection with Pacific Avenue and a neighbor to the “small but mighty” Mojave Brewing Co. and the still-in-progress old-fashioned ice cream shop from the Anderson Dairy Creamery.
Originally dubbed Brisket & Bourbon and designed as an urban lounge hosting live entertainment, a new focus has evolved into a “social kitchen” built around an expanded menu serving breakfast and brunch staples every day, plus American barbecue favorites and a roster of bourbon cocktails.

Featuring architectural nods to the building's past, a preview menu, now removed from the company website, indicates the restaurant plans to welcome locals and visitors from morning until night.
Among the possible dishes, skillet Benedicts created with smoked pork belly, or buttermilk fried chicken, plus pancakes and cinnamon French toast.
The namesake biscuits will be a main attraction, available by the basket, in biscuit cups prepared with eggs, gravy, and cheese, or as sliders. A chalkboard will update customers on the weekly selections of butters, honeys, and jams that can ordered as tasting “flights.”
From the smoker, early plans imagined diners will be able to order portions of St. Louis Ribs, pulled pork, 12-hour brisket, beer mopped chicken, hot links, and pork belly by the pound, upgraded with “fixins” of mac & cheese, sweet potato casserole and burnt ends baked beans.
