Jing, the Asian restaurant at Downtown Summerlin, brings on Thomas Griese as the new executive chef. Jing opened in February in the the former 8,600-square-foot Fogo de Chao Brazilian Steakhouse in the Dining Arroyo area on the north end of the sprawling shopping center
Griese brings a long resume of experience on the Las Vegas Strip with stops at Bouchon at the Venetian, Le Cirque at the Bellagio, Charlie Palmer Steak at the Four Seasons, and most recently the shuttered Sage at Aria. Griese held a corporate chef position with the Mina Group and worked at Mina restaurants such as Margeaux Brasserie in Chicago, Bourbon Steak in San Francisco, StripSteak in Miami, and RN74 in Seattle. Griese also trained under Dario Cecchini, where he worked with the butcher at his Tuscan restaurant before he helped Cecchini open his steakhouse Carna at the Baha Mar in the Bahamas.
Griese is aiming for a late September menu relaunch, adding dishes such as a king crab roll served with warm ponzu butter, hot-rock-grilled steaks, and liquid ice dessert displays.
