GRAMERCY — DW Bistro kicks off an ongoing pop-up, the Dining With Guest Chef Series, that features chefs from restaurants that are either still shut down, have limited hours, or whose projects have been delayed. Lanny Chin starts the series on Saturday, August 8. The Chopped champion formerly worked at The Slanted Door at the Forum Shops at Caesars and Greene St. Kitchen and Apex Social Club at the Palms. His meal includes family-style starters such as pork belly bao buns and Chin family eggrolls; kimchi-braised osso bucco and whole fried rockfish; and desserts such as the Thai chili brownie and a white chocolate truffle milkshake. ONLINE — Bruce Kalman already stepped away from his upcoming restaurant Scuola Vecchia, Italian for old school, going into the Brio space at Tivoli Village, but the chef who co-owns Knead & Co. Pasta Bar + Market in Grand Central Market in downtown Los Angeles and appeared on Bravo’s Top Chef Season 15 plans to do a series of cook-at-home dinners with SecretBurger. Diners can order the ingredients from SecretBurger and pick them up ahead of the online cooking session. The first on August 12 features pickled giadriniere and fresh mozzarella for $65, with optional add ons including melon and prosciutto and an Aperol spritz kit. Out of towners who can’t pick up the ingredients locally can participate for $40. The price includes video, shopping list, and recipes. On August 15-16, Kalman makes barbecue with pork butt and beef brisket served with beans and slaw, barbecue spiced cracklins, and more. A dinner for two starts at $50 with options for more diners. On August 23, he offers a kid’s kit with pepperoni and ricotta lasagna cups. Each kit is priced at $45 ($35 for out-of-town option with video, shopping list, and recipe) and includes kid-friendly add ons such as mocktails and cannoli kits. On August 26, Kalman’s pasta class teaches how to prep of cavatelli as part of a three-course dinner for two that features stone fruit and burrata salad with poppyseed dressing and local honey, ricotta cavatelli alla vodka, and Meyer Lemon and bay leaf panna cotta. Tickets are $85 with optional add ons including a Tuscan bean and corn salad and Negroni kit. Out of towners can participate for $40. Price includes video, shopping list, and recipes.
