Water Street’s Rainbow Club Reopens With a New Burger Restaurant From a Former Strip Chef

Water Street in Henderson keeps the new restaurants coming with the return of the Rainbow Club & Casino and a revamped restaurant with a chef who formerly worked with Emeril Lagasse on the Las Vegas Strip.

Former Lagasse’s Stadium chef Scott Pajak debuts his newest restaurant, Triple B — Brooks Brothers Burgers. Last December, brothers Michael and Timothy Brooks, who also own Water Street’s Emerald Island Casino, bought the Rainbow Club from Peppermill Resorts Inc. and renovated the space during the coronavirus pandemic. The casino and restaurant reopened on Thursday.

Pajak retooled the menu with a roster of burgers and sandwiches such as a fried shrimp po’boy, buttermilk fried chicken sub, HenderTurkey burger, and a Creole burger with chili gouda, carmelized onions, and andouille sausage. A foot-long hot dog and a breakfast burger served on a Belgium waffle round out the choices.

The 10-ounce burgers come with a butter-toasted brioche bun. All of the burgers use hand-pressed Angus beef that aren’t frozen, and come with French fries or tater tots, coleslaw, and a kosher dill pickle.
