Stellar É by José Andrés Reopens at the Cosmopolitan of Las Vegas in October

Only six people will be allowed to dine at a time during the multi-course tasting dinner

One of the toughest tickets to land in Las Vegas makes its triumphant return to the Strip in October. Chef José Andrés brings his stellar multi-course tasting experience é by José Andrés back inside Jaleo on October 15.

Reservations opened for two services every Thursday, Friday, and Saturday at 5:30 p.m. and 8:30 p.m. Each service will allow for a maximum of six guests to attend to maintain COVID-19 dining restrictions. Customers can choose three wait list times through December 26.

The two-hour dinner that’s part of the Eater 38 features chefs rolling out multiple courses, many cooked right at the table and meticulously plated with tweezers, dry ice embellishments, and novelty dishware, including plaster replicas of Andrés’ hands.

Frequently, patrons can plan to dine on Cava Sangria, an edible sphere cocktail filled with white sangria made from Cava, gin, and fruit as well as the empanada, made with a pillowy cotton candy shell, filled with foie gras and corn nuts. Chefs can accommodate vegetarians, pescatarians, and allergies to pork, shellfish, tree nuts, and peanuts with advance notice.

The small room features a dramatic red glass wall and red velvet curtain, a nod to the chef’s concept of cooking as performance.

Two wine pairing options, and the full Jaleo wine list and full bar, are also available.
