Westside Debut Set for CupBop’s Korean Barbecue in a Cup in February

The cult hit opens a second Las Vegas location in days

Less than four months after its eastside debut in the University District, fast-casual Korean barbecue specialists CupBop has already announced a debut date for its first westside expansion.

Rapidly growing from creator Junghun Song’s original Utah food truck, and branded after its namesake packaging and the Korean word for steamed rice, CupBop will launch at the westside’s Rockspring Plaza on Friday, February 5, located next door to the Market Grille Café at 7175 W. Lake Mead Boulevard.

Earning a very loyal customer base dubbed CupBobbers, the short menu focuses on Korean-style barbecue beef, pork, or chicken prepared with cabbage, noodles, and rice, plus sides of fried and popcorn chicken, deep-fried tofu, and potstickers, plus imported Demi Soda, Milkis, and Yoga Vera beverages.

Yet to announce future opening hours, CupBop serves Monday to Saturday from 11 a.m. to 9 p.m. at the University Gardens retail center on Maryland Parkway. It also features a drive-thru that will not be included at the Lake Mead site.
