Virgin Hotels Brings on David Werly as Executive Chef

The chef oversees food and beverage outlets at the new resort

Virgin Hotels still plans to open in early 2021, and now the resort that’s been busy renovating the former Hard Rock Hotel brings on an industry veteran as executive chef for the resort. David Werly brings his 20-plus years of experience to the resort.

Werly oversees the Kitchen at Commons Club, Funny Library Coffee Shop, the Juice Bar, and the food and beverage outlets at the guest pool and dayclub, as well as in-room dining and banquet dining. Aside from creating seasonal and specialty menus, he plans to work as the culinary point of contact for all restaurant partner chefs and provide support to the food and beverage team.

Most recently, Werly was the assistant executive chef of food and beverage at Aria and Vdara. He previously worked as the culinary director for Mandarin Oriental, and executive chef of Le Cirque at the Bellagio, where he was awarded and maintained a Michelin Star from 2007 until his departure in 2010. Between his stints in Las Vegas, Werly managed all food and beverage operations as executive chef at the Setai Miami Beach. Werly trained in France, studying at Lycée Professionnelle de Guebwiller and Lycée Professionnelle de Strasbourg. He is a member of Maîtres Cuisiniers de France (Master Chefs of France). In his spare time, he volunteers with Three Square Food Bank.
