Right on target, the fourth Las Vegas restaurant from Griddlecakes has kept its promise to debut in Spring Valley this spring and may be ready to open its doors within a few short weeks.
Sharing on social media it is pushing toward a March launch, the breakfast-and-lunch specialist is replacing a former Einstein Bros. Bagels coffee shop and taking over 2,299 square feet at the intersection of Rainbow Boulevard and Flamingo Road.
Located inside a stand-alone, easy-to-spot building at the Sprouts-anchored Times Square Shopping Center, Griddlecakes will share the structure with another recent arrival, a drive-thru equipped Dairy Queen. The new space sits five miles to the northeast from the restaurant's original, five-year-old Spring Valley outpost.
A local favorite since 1991 and famed for its spin on classic brunch dishes and oversized, cream-topped pancake plates, the three existing Griddlecakes restaurants on Fort Apache Road, in North Las Vegas, and on Eastern Avenue in the southeast have all returned to daily 7 a.m. to 3 p.m. service.
