Instagram-Friendly Casa Calavera Reveals Its Mexican Menu, Coming in March at Virgin Hotels

Guacamole renditions and a roster of tacos join the Día de los Muertos theme filled with alters for photo ops

In less than one month, Virgin Hotels opens, and now one of the restaurants opening at the renovated resort teases its menu. Hakkasan Group started taking reservations for Casa Calavera, the Mexican restaurant and cantina opening on March 25.

The Instagram-worthy interior features traditional altars made from Mexican tiles, reclaimed wood, calavera skulls, traditional Mexican furniture, posters, and marigolds found throughout the main dining room, bar, and patio overlooking the pool. Casa Calavera leans into a Día de los Muertos theme with a number of murals adoring the wall.

Chef de cuisine Hugo Cabrera created the menu that includes guacamole renditions including the classic with tomatillo, onion, jalapeño, cilantro, and lime; pomegranate with jicama, green apple, and mint; and chipotle bacon with chorizo, adobo, and cotija cheese. Mexican street corn comes on the cob and then rolled in mayo, cotija cheese, and chile tajin.

The restaurant serves contemporary and traditional spins on Mexican favorites including fajitas, carnitas, tacos, and shared plates as well as a drinks menu that places a special focus on mezcal and tequila cocktails. Cabrera says that must-try dishes include chimichurri skirt steak with roasted green chilies, scallion, and cilantro chimichurri sauce and the ají-glazed Mahi Mahi with grilled vegetables and drizzled with a citrus mojo sauce. The range of tacos includes roasted chicken, carne asada, Baja fish, portobello and rajas, and more.

This marks the second location for Casa Calavera, which also has a beachside location in San Jose del Cabo, Mexico.

The restaurant plans to offer paperless menus available via a QR code, tables separated for social distancing in both its main dining room and patio, a rigorous cleaning plan, and a month-long training session with staff to go over Hakkasan Group’s safety plan.

Casa Calavera will be open Sundays through Thursdays from 11:30 a.m. to 10 p.m., and Fridays and Saturdays from 11:30 a.m. to 11 p.m. Reservations are advised due to restricted capacity and can be made online at VirginHotelsLV.com or CasaCalavera.com or by calling 702-522-8000.
