Chef Marc Marrone, who has Graffiti Bao in southwest Las Vegas, adds culinary consultant for Dream Hotel & Residences in Doha, Qatar, to his resume. Marrone will oversee menu development and execution of Dream Doha’s soon-to-be announced restaurant, which plans to open in 2022. Marrone, who worked with Dream in Hollywood, trained at the French Culinary Institute and worked under chefs such as Daniel Boulud, Dan Barber, and Jacque Pepin before starting his 20-year career with Tao Group as chef at Tao Restaurant in New York City. He was appointed executive sous chef at Tao Asian Bistro and worked his way up to West Coast corporate executive chef of Tao Group in 2010. After departing in 2018, Marrone opened Graffiti Bao and Gemma’s Gemma Square Pies in Las Vegas and teamed with SkinnyFats to open HallPass food hall in Salt Lake City last year. He plans to expand SkinnyFats and his upcoming restaurant Italian Graffiti nationwide.
Scott Pajak, the executive chef at the Rainbow Club in Henderson, was recently diagnosed with Guillian-Barre syndrome, a rare disorder where the body’s immune system attacks a person’s nerves. His friends set up a Go Fund Me to raise funds to help with his therapy as he rehabilitates in a local hospital. The fund for the former executive chef at Lagasse’s Stadium raised $15,950 of its $25,000 goal so far. Pajak heads up Triple B — Brooks Brothers Burgers at the Henderson casino.
