Moving into a prime position next door to Shake Shack, locals Jenny and Mark Edington are on target for a spring launch of their Vegas Golden Knights-inspired cookies and dessert restaurant at the District at Green Valley Ranch.
Currently hoping for a June debut and waiting on permit permission to begin construction, plywood is now up at Pucks Cookies & Treats, taking over a section of a shuttered Jos. A. Bank Clothiers store on Village Walk Drive. Early renderings indicate the space will feature a handful of indoor seats, plus tables out on the patio.
Baking its inventory daily with in-house prepared dough, the namesake, 2.5-ounce cookies are shaped like hockey pucks and will be available in an evolving roster of flavors and seasonal specials.
Already testing ingredients at catering events, recent combinations have included a s’mores puck, a gingerbread cookie topped with Nutella and ice cream, plus pumpkin with cinnamon buttercream frosting, Mexican chili chocolate, salty oat with tart cherries, toasted pecan coconut, and the caramel apple with a caramel center.
Also planned, a “Puck Bunny” creation, stacked with a cookie, ice cream, and covered with meringue. Future store hours have yet to be announced.
