Mariena Mercer Boarini left her long-time job as the chef mixologist at the Cosmopolitan of Las Vegas before the pandemic last year to launch her own consulting company, Wanderlush, and Electricdust, a flavor enhancement used in cocktails. Now she lands at Wynn Las Vegas as the resort’s new property mixologist. Mercer Boarini brings her molecular prowess to the resort’s lounges and restaurants with cham-feign foams, show-stopping edible garnishes, and liquid nitrogen flourishes.
The Las Vegas native will work with bars and restaurants to revamp their cocktail programs, and create cocktail menus for new restaurants, including Delilah and the replacement for Elio.

Already she brought the Vespa to Costa Di Mare with Belvedere Mango Passion Vodka, Italicus Bergamot Liqueur, cardamom, ginger, lemon, and a butterfly pea blossom, topped with cham-feign foam and a basil-scented, edible art piece.
Mercer Boarini began experimenting with molecular mixology in 2007, creating a molecular kitchen in her home for her research and experimentation.
