Vegetarian fusion dishes inspired by Southeast Asian menus are very close to a debut in Chinatown, served inside a impressive high ceiling space, decorated wall-to-wall with imported artworks.

Saffron, The Vegetarian Eatery will unveil its 41,184-square-foot “elegant and calming” restaurant inside suite A at 3545 S. Decatur Boulevard, a short distance from Spring Mountain Road and replacing the Sichuan cuisine of Bund Shanghai, on Friday, May 28.

Overseen by W G Constructors, the creative team behind The X Pot at the Venetian, and Cafe Gabi, Hobak Korean BBQ, Yui Edomae Sushi in Chinatown, the 90-seat interior will feature a central indoor fountain, statues, a private dining room, and carved wood wall finishes.

Scheduled to be open daily from 5 to 11 p.m. before expanding its hours later in the year, the seasonally adjusting menu will initially include yam starch Singapore noodles, lightly fried banana flowers with tamarind sauce, umami eggplant with tofu, fried mushroom dumplings, and a collection of vegetarian curries.
