Those heading to the new Virgin Hotels can explore Kassi Beach House, the new Italian restaurant looking out at the pools at the resort from restaurateur Nick Mathers and Wish You Were Here Group, on Saturday, May 29.
The restaurant plans to serve brunch and dinner daily from executive chef Josh Stockton, who previously worked as the executive chef at True Food Kitchen in Downtown Summerlin and as executive chef piazza at Eataly at the Park MGM.
Brunch brings dishes such as grilled octopus with hearts of palm, red onion, celery, tangerine, and olive and caper vinaigrette for $18; salt and pepper calamari for $16; ricotta pancakes with salted caramel, whipped ricotta, brûléed banana, and maple syrup for $14; and a prosciutto scramble for $15. Kassi offers bottomless Fleur de Mer Cotes de Provence Rosé daily from 11 a.m. to 4 p.m.
Dinner, which starts service at 3 p.m., brings whipped eggplant with oven-roasted puccia bread for $14; wagyu beef meatballs for $17; and sausage and broccoli rabe for $22 to start. Crab gemelli al cartoccio with Dungeness crab for $27, veal Milanese for $64, and a 32-ounce grilled bone-in rib-eye steak dry aged for 30 days for $125 make up some of the entrees. For dessert, customers can opt for tiramisu, a chocolate torte, or panda cotta, each for $12.
Kassi Beach House specializes in slushy cocktails to go along with its poolside setting. The Amalfi Slushie combines Cazadores blanco, lime, watermelon, and pineapple while the Subtropic Slushie mixes Mount Gay rum, lime, passion fruit, and orange, both for $15. Other drink options include the Kassi cocktail with lime, watermelon, Calabrian chili, and a choice of liquor; the Gatsby with Roku gin, vermouth, and yellow chartreuse; or the Hercules Goblet with rye whiskey, Metaxa 12 Star brandy, and angostura, all for $18.
The restaurant offers seating in the secluded Rattan Room, lounging on the patio, sun-bathing from one of Kassi Beach House’s private VIP day beds, or perching above the scene in a cabana.
Starting June 2, Kassi kicks of Kassi House Party, a locals’-friendly night with half off pastas, select liquor brands, and featured cocktails that runs every Wednesday. Then beginning on June 4, Kassi hosts its aperitivo hour from 3 to 6 p.m., serving $10 cocktails and $15 pizzas, weekly on Fridays.
