As a six-year veteran at the University Gardens retail center across from UNLV, Chewy Boba has witnessed a steady stream of fast-casual dining restaurants open and shut.
Bucking the trend, the coffee, boba tea, and smoothie specialists are growing their menu and preparing to debut a new location in a higher profile neighborhood.
The counter-service chain recently filed paperwork to expand to the central park area of Town Square, moving next door to the Potato Corner and a short walk from Sickies Garage Burgers & Brews. The small number of permits for the new equipment installation, electrical work, and water supply suggest a debut later this summer.
Already serving macarons alongside a full menu of customizable milk, sea salt and flavored teas, slushies, smoothies, frappes, sea salt cream coffees, the Florida-based company has partnered with local ghost kitchen Mochidon to offer a collection of flavored mochi doughnuts on Maryland Parkway.
Also available at the Bing Cafe in Summerlin and Dark Moon Coffee in Henderson, Mochidon’s selections featured at Chewy Boba have included ube pebbles, toasted vanilla coconut, strawberry cheesecake, and horchata crunch.
