Vegan Cooking School, Eatery, and Lounge Planned for the Hop in the Gateway District

Learn new skills and dine at a vegan deli on Third Street

Plans to create an urban lounge inside Third Street’s Hop Building have been ongoing since 2014, but the latest creative proposal is finally under construction and has been upgraded with a vegan twist.

Chef and co-owner Mindy Poortinga is confidently announcing a June debut for the Vegas Vegan Culinary School at 1310 S. Third Street, close to the intersection with Imperial Avenue and a short walk from recent arrival beer bar Silver Stamp.

New paperwork filed with the City of Las Vegas indicates the tuition space will co-exist within the 3,781-square-foot lounge, featuring a 624-square-foot outdoor patio.

Documents reveal some dishes prepared by participants in the non-accredited cooking school will also be served in the dining area. Classes are described as recreational and require no long-term commitments.

Set to offer a daily, plant-based deli menu and grow to a bi-weekly meal delivery service, a February update sent to the Planning Commission also references a separate bar area, with the eatery already hinting at a collection of vegan wines and the inclusion of a “fancy” espresso machine.
