On Demand Sushi Already Plans to Expand Its Sashimi and Nigiri to Southern Highlands

Sushi platters, tempura, sashimi, and nigiri are on the way

locals On Demand Sushi, the family-owned restaurant that sources “exclusively at other small businesses” has grown from its origins as a ghost kitchen to a small outpost in the southwest in less than a year. Now it plans to expand to Southern Highlands.

Replacing a shuttered hair salon, On Demand Sushi will become a rare casual Japanese dining option in the neighborhood when it moves into the Fire Station Plaza, located at the intersection of Valley View Boulevard and Southern Highlands Parkway.

Yet to announce the move, recently filed paperwork reveals the interior makeover will include “booth and bar top seating.”

Operating at the corner of Russell Road and Hualapai Way since last June, the compact space offers a handful of tables and has been focused on takeout, delivery orders, and creating sushi platters. The original location is open daily from 11 a.m. to 8:30 p.m. and closing at 9 p.m. on Friday and Saturday.

Featuring sushi, poke bowls, sashimi, and nigiri, the menu also includes furikake fried chicken, kalbi, salmon kama, tempura combos, poke nachos, specialty rolls, and seaweed salad.
